The boutique hotel Indigo Pearl, formerly known as the Pearl Village, recently been renovated to evoke the architecture and atmosphere of a Thai tin factory reminiscent of Phuket’s rich tin mining heritage from over a century ago. A two-storey building that is representative of a mining shaft, holds Rivet Grill, a modern contemporary grill that serves not only beef and seafood items but a vast array of starters, and the open-aired Rebar where tapas, live music and views of the Andaman Sea are to be enjoyed with drinks. Polished cement floors and blackened stainless steel laden with brass rivets pervade these restaurants’ and the resort’s décor.

Dinner at the Rivet holds some rare gems. With specialties prepared by Executive Chef Dion McGrath, the mastermind behind the exquisite culinary flair, visually appealing and delicious delights are to be savoured. The medley of appetizers – tantalizing treats of an Asian, particularly Japanese, flavour – were a profound beginning: the Grilled Sweet Eel and Foie Gras with mango salsa; the Seafood Ceviche; Tempura Rolls of Salmon, Avocado, Flying Fish Roe and Spicy Cream Dressing and the Pan-fried Fresh Crab Cakes.

The grilled items also deserve special mention. The tenderloin of Australian Wagyu Beef, a type of meat, which is currently available only in Phuket at Indigo Pearl, and served with a rich and tasty peppercorn sauce was a succulent and tender dish not to be missed. The Grilled Salmon Steak was also moist and superb in taste. Side dishes of roast garlic mashed and creamy gratin potatoes and marinated grilled vegetables were ideal partners to the mains.

An extraordinary meal necessitates fine wines and delightful desserts. Howling Wolves, an Australian Cabernet Sauvignon, proved to be a perfect complement to the meal. The Warm Chocolate Pudding with vanilla ice cream and the Panna Cotta with coconut cream and cherry compote were a lavish finish.
